When we were first married, Dallas was pretty set on figuring out how to make Cafe Rio’s Sweet Pork recipe. Since the whole roast and Coke recipe seemed really complicated and way to much stinkin’ work, we opted to try it out with chicken.
We got pretty dang close, and we LOVE this recipe! This is our go to chicken recipe if we are making Cafe Rio Burritos, taquitos, enchiladas… basically anything good. It is so simple, and it’s good in everything.
This is Dallas’ Sweet Shredded Chicken Recipe:
Ingredients
1/4 cup BBQ Sauce
1 1/2 cup Brown Sugar
1 spoon-full minced garlic
3-5 Boneless Chicken Breasts (frozen)
Directions
1- In a crock pot, mix the BBQ sauce and brown sugar together. It will make a thick sugary paste. Stir in the garlic. Add chicken breasts to the crock pot, and cover chicken breasts in the sauce.
2- Cover, and cook on low for 6 hours or on high for 3-4 hours.
3- After the chicken has cooked, place the breasts on a plate and shred. After the chicken is shredded, place back in crock pot to cook for 10 more minutes in the sauce.
